cauliflower potato soup w/roasted cumin

This is one of the soups we made for the Indyish Stone Soup Monthly Mess!

cauliflower potato soup w/ roasted cumin

1 large onion (diced)
1 cauliflower (chopped up)
3 medium potatoes (diced)
2 liters of water or stock
1 teaspoon of roasted cumin*
salt and pepper to taste
2 Tablespoons of olive oil

saute onion in the olive oil slowly over medium heat
add ground cumin to the onions, cook for 2 or 3 minutes
add cauliflower, saute w/ onion and cumin
add potato, salt and pepper, stir it up
add stock or water
bring to a boil
lower heat
simmer for 15-20 minutes, until potatoes are soft
blend w/ a hand blender until smooth but still a little chunky
parsley can be added for color
if the soup is too thick
add a little more stock

-Add a head of roasted garlic for a delicious variation

stew in the wilds*to roast cumin: heat a skillet to medium/high heat. add dry whole cumin seed stir constantly to avoid burning. quickly transfer toasted seeds to a bowl when they start to release their aroma.
grind the seeds in a coffee grinder or mortar and pestal.
